Easy Blue Cheese Brussel Sprouts:

This recipe calls for just 5 very simple ingredients and only takes me 15 minutes from start to finish.

It’s highly customizable – add this, take out this. Toast this, change this to that.

I’ve explained all of the most common adjustments in the sections “ingredient variations” below.

This is one of those recipes that is hard to mess up and anyone can make.

It definitely is a recipe you can serve at a fancy dinner party, with it’s handsome good looks and sophisticated taste!

No one needs to know how easy it was to put together! It’ll be our little secret!

Ingredient List:

  • 1 bag fresh brussel sprouts, trimmed and cut in half
  • 1 Tablespoon olive oil or butter
  • 1/4 tsp fresh ground pepper
  • 1/3 cup crumbled bleu cheese
  • 1/3 cup chopped walnuts, toasted {you don’t have to toast them if you don’t want to!}
  • Salt to taste (optional)

Simple Directions:

  1. In a large nonstick skillet over medium heat, melt the butter or heat your oil, then add in your brussel sprouts. Saute for 10-15 minutes, stirring and flipping the sprouts occasionally until the desired tenderness is achieved. See recipe pro tips section on tenderness.
  2. After the brussel sprouts have been cooked to your desired tenderness and while still hot, quickly sprinkle the pepper, cheese, and walnuts on top, and stir to combine until the cheese starts to become slightly melted. Serve immediately.

Recipe Pro Tips:

If you like a more tender-crisp brussel sprout, you will likely saute the brussel sprouts for 10-12 minutes in the skillet.

For more tender and soft brussel sprouts, you will likely need to saute the sprouts for more like 13-15 minutes.

If you would like your nuts toasted, toss them in the last 3-4 minutes of when your brussel sprouts are sauteing to give them a slight toasting and softening to them.

Ingredient Variations and Substitutions:

You can substitute pecan pieces in for the walnut pieces and gorgonzola or goat cheese for the blue cheese if you are need of a switcharoo.

Storing Your Leftovers:

You can store your leftover blue cheese brussel sprouts in an airtight container in the fridge once cooled down to room temperature for up to 3 days.

They won’t last that long in your fridge once you know how easy they are to reheat and devour again!

Reheating Instructions:

To reheat your leftover refrigerated brussel sprouts, simply place the amount you would like reheated in a microwave-safe dish with a cover on it in the microwave with your sprouts.

Microwave on high in 30 second increments, checking the temperature after each 30 second cooking interval until the desired temperature is met.

Brussel sprouts can heat up quite quickly in the microwave so be sure to check them every 30 seconds for doneness.  Don’t burn yourself!
